I think everyone needs one, the perfect one recipe for a blueberry cake. I’ll tell you that it is this recipe, and you will have to try it. Blueberries are quite in season in July.

This magical cake is perfect for summer gatherings with iced coffee and, of course, #chakulanje.

Preparation time: 60 minutes


– 125 g of sugar

– 100 g softened butter

– 100 g of Greek yogurt

– 2 eggs

– 250 g of flour

– 1 baking powder

– 2 teaspoons of vanilla extract

– 4 egg whites

– skin of 3 lemons

– 300 g blueberries


– juice of 1 lemon

– 150 g of powdered sugar


This recipe is for a round mold with a diameter of 20 cm. If you do not have that, there is no problem. On this recipe I showed you how to make the mold with the aluminum foil. Place the baking paper on the bottom of the mold and turn on the oven at 170°C.

Wash the blueberries and leave them in the bowl to get dry.

In a bowl, mix the egg whites. In the second bowl, mix yoghurt, sugar and butter with a mixer in a uniform mixture. Add whole eggs, which we have previously muted briefly. Mix the half of the prepared flour in the mixture. Add the egg whites, the second half of the flour, baking powder, vanilla extract and the lemon skin. Finally add 200 g of blueberries.

Transfer the mixture into the mold. Add the left of blueberries to the surface. Bake for 30 minutes until the cake gets a golden color. Take it out and let it cool down.

Prepare the icing by mixing sugar and lemon juice. The mixture need to be dense. Apply the icing over a cooled cake.

If you have several pieces left, keep them in the refrigerator.
