Do you know why this bundt cake is ideal for Easter holidays?

On first sight it is just an ordinary bundt cake, but inside there is a soft marshmallow crème and magical taste. The cake resembles this spring, which upon recently brought us some real snow as well.

Baking this bundt cake I also learnt an important lesson and that although it is a silicone bundt pan I should have sprayed it with butter. But I didn’t.

Nevertheless, the recipe and photos are before you. Despite this minor disaster, the bundt cake was eaten in record time and nobody even noticed this bundt pan accident.

Preparation time: 60 minutes

Ingredients:

Cake

225 g butter

350 g sugar

2 eggs

2 egg yolks

1 teaspoon vanilla extract

2 teaspoons baking powder

1 teaspoon salt

315 g flour

235 ml milk

Filling

2 egg whites

135 g sugar

1 teaspoon lemon juice

1 teaspoon vanilla extract

Preparation:

Heat the oven to 180°C. Generously grease the bundt pan with butter (grease even if the pan is silicone!).

In a large bowl, mix the butter and sugar until the mixture becomes fluffy. Beat in the eggs, one at a time, and then the egg yolks. Add vanilla extract, salt and baking powder. Mix in 1/3 of prepared flour, then 1/3 of milk and continue until you run out of flour and milk.

Place the mixture in the pan and bake for 40-45 minutes and check with a toothpick if it is baked. Leave in the pan for 10 minutes, and then switch to the tray.

When the bundt cake is cool, turn it back to the top. Then, with a small spoon or knife, take out small balls of the mixture (as shown in the photo).

Prepare the filling. In a bowl combine egg whites, sugar and lemon juice. Whisk the mixture over a pot of gently simmering water until sugar is dissolved – 3 minutes. Remove from steam and mix with a mixer until stiff, glossy peaks form, on average about 7 minutes. Add vanilla extract.

Put the filling in each hole that you made in the cake. Once done, reverse the bundt cake on a platter.

Because of the bundt pan I poured chocolate ganache over the bundt cake, but if you do not want to, you can spray the cake with powdered sugar before serving.
