My love for lemon is I believe now far-known. As many make and eat all made from chocolate, so I do with lemon.
Lemon curd, i.e. lemon cream is quite challenging to make, but in this recipe I’ve simplified it so it cannot fail you.
These bars are very refreshing and excellent for these spring days with summer temperatures. Easy to make and a very refreshing dessert.
Preparation time: 30 minutes
– 85 g of ground almonds
– 50 g of flour
– 1 tablespoons of coconut
– 25 g of coconut oil
– 40 g of honey
– juice of 2 lemons
– grated zest of 1 lemon
– juice of 1 lime
– 145 ml of milk
– 50 g of honey
– 1 teaspoon of cornstarch
– 1 tablespoon of coconut oil
– 1 teaspoon of vanilla extract
– pinch of turmeric, for color
Put all ingredients for the base in a blender and mix until all ingredients combine. Place the baking paper in a bread mold. Put the mixture in the mold and straighten it. Bake for 20 minutes at 180°C.
Meanwhile, prepare the lemon curd. Put all ingredients in a pot and heat on a medium temperature, whisking. When the mixture boils, it will stiff. Put in a refrigerator to cool.
Place the chilled mixture over the biscuit and leave it in the refrigerator for at least 4 hours. Cut into bars to a size of 3 cm and decorate them.
