These muffins are the only and best recipe you will ever need. Perhaps you read such sentence rather often, but since I’ve made about 50 of these muffins so far and each one is eaten, I think I have solid evidence.
I still have apples in stock and are so juicy that I don’t want them to perish, so I am using them in all possible ways. I added sour cherries because this note of acidity perfectly suits.
This quantity is for 24 muffins because you eat two in 2 minutes.
Preparation time: 45 minutes
– 300g flour
– 1 baking powder
– 2 teaspoons of cinnamon
– 1 teaspoon of ginger
– pinch of salt
– 100 g melted butter
– 240 ml milk
– 2 eggs
– 80 g brown sugar
– 6 smaller apples
– 24 sour cherries
– 20 g brown sugar
– 1 teaspoon of cinnamon
Mix dry ingredients: flour, baking powder, cinnamon, ginger and salt. In another bowl, mix the melted butter, milk, eggs and sugar.
Mix the two mixtures with a whisker until combined. Wash and clean the apples and cut into cubes. Add the apples gently to the mixture.
Transfer the mixture into molds, sprinkle with a mixture of cinnamon and sugar and bake for 25 minutes at 190 ° C.
