I remember when I started with Chakula, one of the first suggestions was to have some recipe for fish. Well, it took almost a year, but it is here! And it was worth it to wait for it.
My friend Miha from Ljubljana is a gourmet eater, chef and food lover. He is behind a very popular Instagram account Luda kucha. It is there I see him cooking all kind of delicacies, including this recipe.
I asked Miha to share his recipe, so we could all prepare it at home. Let me know how delicious it was.
Preparation time: 60 minutes
Ingredients (for 3 persons):
– 3 medium size sea bass
– 2,5 kg of salt
– 190 ml of water
– 6 slices of lemon
– 3 sprigs of rosemary
– garlic (whole head)
– olive oil
– thyme sprigs
– sour cream
Side dish – radicchio salad
– 1 clove of garlic
– pumpkin oil
– balsamic vinegar
– 1 large potato
– 1 Radicchio Treviso or Chioggia
We are preparing the side dish. Peel the potato and cut it into small pieces. Cook them in salted water over medium/high heat, until cooked. Remove the excess water, place cooked potatoes in a salad bowl, ad 1 clove of crushed garlic, pumpkin oil, salt and balsamic vinegar. Mix the ingredients and leave to cool down a little bit. Before serving add the radicchio Treviso or Chioggia.
We are preparing the garlic dressing.
Preheat the oven at around 160 °C.
Cut the top of the garlic head off, place the bottom into the ovenproof pan. Drizzle over some olive oil, thyme, salt and pepper.
Bake at 160 °C, for 50 to 60 minutes. Leave to cool down a little bit and squeeze out the garlic from the skin. Finely chop the baked cloves, ad a little bit of olive oil, a spoon of sour cream and season with salt, pepper and thyme.
Preparing the main course.
Clean the sea bass, salt them on the inside and put in 2 slices of lemon and sprig of rosemary.
Mix the salt with the water. You will get a texture like snow. Put ⅓ of it on the baking tray and form a thin layer of salt.
Put the sea bass on the salt and cover them with the rest of the salt. Make sure all of it is covered with salt. Place the tray into the preheated oven, 180 °C, for 25 – 30 minutes. Before serving use the spoon and gently break the salt crust. Be gentle, do not remove the skin until you removed salt completely.
