You know those days when you need to make lunch, and you no longer know what to make. That is also healthy, tasty, and if you have kids something they will eat other than potatoes and pizza?

In this recipe, they will not know that zucchini are there, it is absolutely simple and made up of 4 ingredients. Also, we make the cream/sauce from the peel of zucchini. So we do not throw anything.

This is another recipe with a step by step explanation and I photographed the entire process.

Preparation time: 45 minutes

Ingredients (for 14 balls):

– 2 medium sized zucchini

– 75 g smoked cheese

– 75 g bread crumbles

– 1 egg

– salt and pepper

Sauce of zucchini peel

– peel of 2 zucchini

– 1 tablespoon of sour cream

– 1 tablespoon of olive oil

– salt and pepper

First step is to wash and peel the zucchini.

Grate the zucchini, salt it and put in the colander to drain the excess water. The zucchini will drain for about 15 minutes, while we make the sauce.

We make the sauce by putting in the blender the peel, sour cream, olive oil, salt and pepper. Taste the sauce and add salt and pepper to taste. Leave the sauce in the fridge.

We continue to prepare the balls. Add the grated smoked cheese, bread crumbs, egg, salt and pepper. Combine the ingredients in a uniform mixture.

We make the balls from the mixture. These are a little bigger. The next time I made the balls smaller and turned out to be 19. As you wish.

Bake at 180°C for 30 minutes.


And that’s it. These are great the next day to take to work as a snack.
